What you'll need
Virgin Earl Greyhound: Give Your Evening Some Zest
How to make it
-
Brew Earl Great in 100ml of freshly boiled water for three minutes.
-
Strain the leaves, then stir in the sugar while the tea is still hot until fully dissolved.
-
Leave the sweetened tea to cool.
-
Fill a tall glass generously with ice. Pour in the cooled tea and grapefruit juice, then stir.
-
Top with sparkling water and give it one gentle final stir.
-
Finish with a slice or twist of grapefruit. Put your feet up. You’ve made something rather good.
Do I need the sugar?
You don’t have to add it, but grapefruit has a tart, slightly bitter edge. A little sugar helps round that off without turning your drink into something that belongs at a children’s party.
Start with one teaspoon if you enjoy a sharper drink, or two for a sweeter finish. You can leave it out altogether if that’s how you like your grapefruit.
The useful bit? Stir it into the tea while it’s hot so it dissolves properly. No syrups to make and no gritty surprise at the bottom of your glass.
Fresh grapefruit or juice from a carton?
Either works. Freshly squeezed pink grapefruit brings a lovely fresh flavour, but a carton makes this an easy cupboard-and-fridge affair.
The sweetness will vary between juices, so adjust the sugar to suit yours. Pink grapefruit is our pick for its colour and flavour, though you can use white grapefruit if you prefer a sharper edge.
Make it your moment
Pour one while you’re getting ready for dinner, serve it when friends come round or give your usual evening drink a little shake-up.
For a finishing flourish, squeeze a strip of grapefruit peel gently over the glass before dropping it in. It releases a little citrus oil and makes that first sip smell rather lovely.
Bright grapefruit, fragrant Earl Great and a little sparkle.
Your evening plans just got a refresh.
