Head in the Clouds: Vanilla Cloud Iced Tea
A cool, creamy iced tea topped with a soft cloud of vanilla foam. Made with Biscuit Break for a biscuity little treat, or Billy’s Brew for a smooth, classic milk-tea moment.
Make it a moment
- Brew the tea in 150ml freshly boiled water for 4–5 minutes. Using extra tea creates a full-flavoured base that won’t disappear beneath the ice and foam.
- Remove the tea leaves and leave the brew to cool for a few minutes.
- Add the cold milk and vanilla syrup to a milk frother. Use the cold setting until the milk becomes thick, silky and pourable. No frother? Whisk vigorously or shake everything in a tightly sealed jar.
- Fill a tall glass with ice and pour over the tea.
- Slowly spoon or pour the vanilla cold foam on top. Finish with a tiny dusting of cinnamon if you fancy it.
Choose your cloud
Biscuit Break makes it malty, biscuity and wonderfully dessert-like, with cocoa, date and vanilla notes coming through beneath the foam.
Billy’s Brew creates a cleaner, more classic vanilla iced tea with a proper black-tea backbone.
Sip through the foam rather than stirring it straight in. You’ll get cool tea and creamy vanilla in every mouthful.
