Fire & Foam: A Chilli Chocolate Chai Latte

What you'll need

  • 4g Chai Hard loose-leaf tea
  • 100ml freshly boiled water
  • 150ml milk or non-dairy milk
  • 1 teaspoon unsweetened cocoa powder

Fire & Foam: A Chilli Chocolate Chai Latte

Sweet first. Spice next. Then the chilli turns up fashionably late.

This chilli chocolate chai latte combines a strong brew of Chai Hard with warm, frothy cocoa milk. It’s creamy and properly chocolatey, with warming chai spices and a flicker of chilli at the finish.

Comforting, but with considerably more attitude.

How to make it

  1. Add Chai Hard to 100ml of freshly boiled water and brew for the time recommended on the pack.

  2. Add the cocoa powder to a small saucepan with a splash of milk. Mix into a smooth paste before gradually whisking in the remaining milk.

  3. Add any sweetener, vanilla or salt you’d like to use.

  4. Warm gently until steaming but not boiling, whisking occasionally so the cocoa stays beautifully smooth.

  5. Froth the warm cocoa milk using a handheld frother, milk frother or whisk. You’re looking for soft, creamy foam rather than something with structural integrity.

  6. Strain the tea into your mug.

  7. Pour in most of the warm cocoa milk, holding back the thickest foam, then spoon the foam generously over the top.

  8. Finish with a dusting of cocoa, cinnamon or a little of both.

  9. If Chai Hard’s existing chilli apparently isn’t testing your character enough, add the smallest extra pinch on top.

Why brew the tea strongly?

Milk and cocoa both soften the flavour of tea, so Chai Hard needs a little extra strength to keep its spices and chilli firmly in the room.

Using twice the usual amount of tea in less water creates a concentrated brew without leaving the leaves steeping for much longer. More tea gives you greater depth; too much time can bring bitterness.

Make smooth cocoa milk

Cocoa powder has a habit of forming tiny dry lumps when added directly to a full pan of milk.

Mixing it with a small splash of milk first creates a smooth paste. You can then gradually whisk in the remaining milk without spending the next five minutes chasing cocoa islands around the saucepan.

Unsweetened cocoa deepens Chai Hard’s chocolatey notes without making the drink heavy or overly sweet. Taste the finished latte before adding any sweetener—you may love it exactly as it is.

Mix it up

Start with Chai Hard, cocoa and your usual milk. Then choose the extras according to where you want to take it.

Vanilla - softer and creamier
Add a few drops to the warm cocoa milk. Vanilla rounds off the chilli and makes the chocolate taste smoother without adding much sweetness.

Sugar - simple sweetness
Use half a teaspoon when you want to soften the cocoa and chilli without introducing another flavour.

Honey - mellow and fragrant
Honey brings a softer, slightly floral sweetness that works particularly well with the warming chai spices.

Maple syrup - warm and caramel-like
Add half a teaspoon for deeper sweetness with a hint of caramel. Lovely, but entirely optional—this recipe doesn’t depend on it.

Sea salt - deeper chocolate
The tiniest pinch makes the cocoa taste richer and helps balance the sweetness. It shouldn’t taste salty; restraint is doing important work here.

Cinnamon - more warming spice
Whisk a pinch into the cocoa milk or dust it over the foam. It strengthens the chai character without adding more chilli heat.

Orange zest - bright and chocolatey
Grate a little over the finished latte for a fragrant chocolate-orange twist. Use zest rather than juice, which may split the milk.

Extra cocoa - darker and richer
Increase the cocoa to 1½ teaspoons for a deeper, less sweet chocolate flavour.

Extra chilli - considerably braver
Mix the smallest pinch of chilli or cayenne with the cocoa topping. Add cautiously—you’re looking for a warming glow, not an incident requiring paperwork.

Bold spice, soft cocoa foam and just enough fire to keep things interesting. Chai Hard cleans up surprisingly well.
